Probably the best concept to emerge from former spa pastry chef O'Connor's second collection is the emphasis on the culinary versatility of phyllo. It certainly deserves its Greek name of "leaves," judging from the nearly 30 recipes the author showcases, representing about a 50-50 mix of classic and nouvelle dishes. Other good features include strict instructions about handling, storing, and reheating these transparent dough sheets and a parade of foodstuff ideas for stuffing phyllo cups. Unfortunately, her directions for each specific recipe are not easily decipherable; without clearly numbered steps and larger type sizes, novice phyllo-sters could get confused.
